My daughter wanted to cook dinner one night, so I gave my 10 year old free run of the kitchen. She came up with this great idea. It was so good that we have made it several times since!

Mozzarella cheese
Heat oven to 375 degrees. Arrange pita bread on cookie sheet or pizza pan. Drizzle and spread Watkins garlic & parsley grapeseed oil over pita bread.
Sprinkle Watkins Tomato & Basil dip mix over each pita Sprinkle with salt & pepper. Top with mozzarella cheese. Bake for 5 - 10 minutes. Cut in quarters

How do I enter?

All eligible recipes that meet the above criteria will be prepared and tested in the Watkins Test Kitchen at our home office, in Winona, MN. Recipes not meeting the above criteria will be disqualified. Recipes will be tested by a random panel of food professionals and non-professionals, judged on taste, appearance, creativity, use of other organic materials and consumer appeal.
What happens if I win?
You will be contacted by between December 1st and December 10th. Finalists will be required to certify that their recipe is original to them, and has never been previously published in a national newspaper or magazine. You will then be presented with a check of $500. Your recipe will be professionally photographed and will be listed on our website at http://www.jrwatkins.com/, where you will be credited for the recipe submission. Your recipe is subject to publication in any printed material Watkins chooses for the marketing and advertising of our products.
When will winners be posted?
Winners will be posted on our website December 10th, 2007.

Pork Tenderloin with Mango Chutney
Ingredients
1-1/2 lb/681 g pork tenderloin
3 to 4 tbsp/45 to 60 mL fresh lime juice
1 tbsp/15 mL All Purpose Seasoning (ref ID# 358211)
1/2 tsp/2.5 mL, if desired, freshly ground Sea Salt (ref ID# 358211)
Mango Chutney
3/4 cup/180 mL finely chopped mango (about 2 medium)
2 tbsp/30 mL Tropical Salsa (ref ID# 358211)
Cooking Directions
Trim fat from tenderloin. Combine lime juice, spice rub and sea salt in large resealable plastic bag. Add pork; seal bag. Marinate in refrigerator at least 30 minutes or overnight. Remove tenderloin from bag reserving marinade. Grill until meat thermometer registers 160ºF/70ºC, about 30 minutes, turning and basting occasionally with marinade. Cut into thin slices; serve with Mango Chutney.Makes 6 servings.Mango Chutney Combine and let stand until serving time.Makes 3/4 cup/180 mL.
