Sweet & Sour Refrigerator Pickles



Ingredients
Syrup:
2 cups/500 mL sugar
2 cups/500 mL white vinegar
4 to 6 cucumbers
2 medium onions, thinly sliced
1 medium green pepper, thinly sliced
1/4 cup/60 mL pickling salt or kosher salt
1-1/2 tsp/7.5 mL Celery Seed
1-1/2 tsp/7.5 mL Garlic Flakes (optional)

Cooking Directions
Combine syrup ingredients; let stand for 2 hours or until sugar is dissolved. Wash cucumbers with Fresh Wash and thinly slice. Place with remaining ingredients in a large bowl; mix well and let stand for 2 hours. Drain carefully, retaining as much of the spice blend as possible. Pack loosely into sterilized glass jars. Pour syrup over top. Turn jars over occasionally to mix spices. Ready to eat in 3 days. Keep refrigerated.


Makes 4 pints/demi-liters.

Cheesy artichoke-crab dip


Ingredients
1/2 cup/125 mL real mayonnaise

1 package (8 oz/227 g) cream cheese

1 tsp/5 mL Watkins Garlic Granules (ref ID# 358211)

3 tbsp/45 mL Watkins Crab Snack & Dip Seasoning (ref ID# 358211)

2 cans artichoke hearts, drained and chopped

1 cup/250 mL shredded mozzarella cheese

5 oz/140 g shredded Parmesan cheese



Mix together mayonnaise, cream cheese, Watkins Garlic Granules and Watkins Crab Snack & Dip Seasoning in a bowl until smooth. 2. Add chopped artichokes and cheese; mix well.3. Bake in an ungreased baking dish at 350°F/180°C for 30 minutes or until edges begin to turn golden brown.Serve hot with garlic-flavored bagel chips.

Goat Cheese Dip

Ingredients
6 ounce(s) cheese, goat cheese, crumbled, reduced fat
1 tablespoon yogurt, fat-free plain
3-4 tbsp of Watkins Cucumber & Dill Dip Mix (use ID# 358211)

Parsley (use ID# 358211)
fresh raw vegetables for dipping

Preparation
Put the cheese, yogurt, and dip mix in bowl and blend. Cover and refrigerate for at least 1 hour.
Sprinkle with parsley. Serve chilled with vegetables for dipping.

Serving size: 3 tablespoons

Quick and Easy White Pizza

Watkins brings family closer together and kids love to cook! Watkins opens up the door to the opportunities of fun , creative and simple cooking while teaching kids to try different foods that are better for them. My daughter wanted to cook dinner one night, so I gave my 10 year old free run of the kitchen. She came up with this great idea. It was so good that we have made it several times since!

4 Pita bread
Watkins Garlic & Parsley grapeseed oil
Watkins Tomato & Basil dip mix (ref My ID# 358211)
Salt
Pepper (try the Italian Pepper)!
Mozzarella cheese

Heat oven to 375 degrees. Arrange pita bread on cookie sheet or pizza pan. Drizzle and spread Watkins garlic & parsley grapeseed oil over pita bread.
Sprinkle Watkins Tomato & Basil dip mix over each pita Sprinkle with salt & pepper. Top with mozzarella cheese. Bake for 5 - 10 minutes. Cut in quarters
and Enjoy!

Variation: Serve with Salsa: prepared with chopped tomatoes, onions and Watkins Salsa Seasoning!

Tomato & Basil Pasta Salad


Ingredients
12 oz/170 g penne pasta
1/4 cup/60 mL Garlic & Parsley Grapeseed Oil (ref ID# 358211)
1/4 cup/60 mL water
3 tbsp/45 mL Tomato & Basil Snack & Dip Seasoning (ref ID# 358211)
1/2 tsp/2.5 mL Onion & Garlic Pepper (ref ID# 358211)
1 cup/250 mL cherry tomatoes, halved
1 medium green bell pepper, chopped1 medium yellow or red bell pepper, chopped
1/4 cup/60 mL green onions, chopped
1/4 cup/60 mL sliced black olives
4 oz/113 g mozzarella cheese, cubed (or fresh)
1/4 cup/60 mL Parmesan cheese
Sea Salt & Cracked Black Pepper (ref ID# 358211)

Cooking Directions
Cook pasta according to package until al dente. Rinse with cold water and drain.Mix oil, water, Snack & Dip Seasoning and garlic pepper together in small bowl. Set aside.Combine vegetables with pasta and dressing and mix thoroughly. Add cheeses, adjust salt and pepper if desired and chill for at least three hours to allow flavors to develop.Makes 12 servings.

1-2-3- Avocado Salsa


Ingredients

1 tbsp/15 mL water
2 tsp/10 mL Cilantro
1/2 tsp/2.5 mL Cumin
1/4 tsp/1.2 mL Cayenne Pepper
1 tsp/5 mL salt
1 red onion, diced
2 avocadoes, peeled and diced
3 tomatoes, chopped
2 limes

Cooking Directions
Combine the first five ingredients in a bowl and let sit while chopping vegetables.Dice and chop onion, avocados and tomatoes. Place in bowl; add spice mixture and toss to coat evenly. Squeeze limes over salsa; toss to coat.Serves 8.
